Usually people opt for a tiered fruit cake with royal icing. The top layer is supposed to be kept as a christening cake for the first child (remove the icing and keep in an airtight tin and don't wait 10 years to have children!). You can choose from a range of heavy, dark fruitcakes, and make it unique with a particular kind of icing, or with a personalised cake topper. Increasingly popular are sponge cakes (which don't keep for years) or even gateaux. You could also opt for covering a sponge cake in royal icing for a traditional look but without the fruit cake. French weddings traditionally have the croquemboche, a mountain of profiteroles, which might make a welcome change for your guests.

As the centrepiece of your reception, your cake should represent the theme of your wedding. Things you might like to think about are the style, shape, colour and adornments. Browse through cake books & Magazines to add to your collection of photographs of cakes that inspire you or even make it personnel to you. If you want your cake custom-designed to co-ordinate with the decor of your wedding, bring colour samples, a swatch of fabric from your gown and/ or your attendants' dresses, a copy of your invitation, or anything else you would like the cake fashioned after.

Cake cost is based per slice and is determined by how complex the overall design. As a result, there are 2 easy ways to keep your cake within budget. The first tip is to choose a more simple design with minimal adornments. Fresh fruit and flowers are the cheapest, while handmade gum paste or sugar paste decorations are more expensive. If you have your heart set on an intricate design you saw in a magazine, don't worry that the associated cost will break your budget. Many brides opt for a smaller, intricately designed cake to showcase at their wedding, while simple sheet cakes are held in the kitchen to be served to guests. As always the best advice is to shop around and get a few quotes, but remember some may charge extra for shipping your cake and some venues also charge a cake cutting fee.

Customarily the wedding cake is displayed on a small decorated table in front of the bridal table which can complement the theme of the wedding either with flowers or even have champagne & glasses ready to begin the celebrations.

The cake is traditionally cut after the speeches and concludes the formal part of the wedding. Normally an engraved knife is ready for the bride & groom to slice the first piece of cake together. The wedding cake should be cut together by the couple with their right hands overlapping. The cake is then taken away to be cut by the catering staff and placed in boxes or served with coffee.

A good photographic tip for the cake cutting, as it tends to be a bit of a scrum with everyone wanting to get this shot, is to have the photographer take a few mock cake cuttings images earlier in the day. The photographer will have the time and space to pose and light the shot better than the actual moment. Once the safety shots are in the can, then when the real thing comes it doesn’t matter so much if Aunty Margaret’s hat keeps getting in the shot!
